Why You Want This Recipe
Biscotti is easy to make in your air fryer, making it an easy win even for those that aren’t great bakers. While I have a personal love of the orange and almond combination, there are tons of different flavors you can make.
Pistachio and cranberry, oatmeal, and chocolate biscotti are some of my other combinations, but feel free to experiment and make your own favorite! Since you’re no longer limited to store bought, the possibilities are endless.

Aside from a great breakfast treat, snack, or afternoon pick me up, freshly made biscotti is a great gift. Wrap some up and don’t stress about that holiday baking! You can also try some of my microwave peppermint bark for another easy option.
Shopping List: Ingredients to Grab

- 3 Tbsp Olive oil
- 2 large eggs
- 1 cup all purpose flour (plus a little extra for dusting)
- ⅓ cup granulated white sugar
- 1 tsp baking powder
- ¼ tsp salt
- 1 tsp orange extract
- ½ tsp vanilla extract
- ½ cup toasted almond slices
Ingredient Tips & Substitutions
- Oil. You can use vegetable oil (or really any other oil) or an equivalent amount of unsalted, melted butter in place of olive oil
- Sugar. Brown sugar in the same amount can be substituted if desired
- Extract. To change the flavor of your biscotti, substitute different flavors of extracts as desired
- For a stronger orange flavor, add in 1 tsp grated orange zest in addition to the extract
- Almonds. This recipe is also great with walnuts, pecans, or pistachios
Pro Tip: If you cannot find toasted nuts, you can always stick raw ones in the air fryer for about 5 minutes at 300°F to do the trick!
How to Make Air Fryer Biscotti
- Mix the oil, eggs, extracts, and sugar in a bowl, stirring well to combine

- Add in the dry ingredients and stir until fully incorporated. The dough should be sticky but workable. Add up to an additional ¼ cup of flour if needed

- Fold the sliced nuts into the dough

- Preheat your air fryer to 320°F (or 325°F depending on your air fryer’s settings)
- Place your dough ball on a piece of parchment paper or silicone baking mat that fits in your air fryer basket

- Using your hands, pat the dough ball down into a rectangular shape that’s around ½” thick. Pro tip: Dust your hands in flour or use a second sheet of parchment to press the dough to prevent sticking

- Place the dough rectangle on the parchment paper into the preheated air fryer basket

- Cook on air fry setting for 10 minutes at 320°F
- Remove the biscotti loaf from your air fryer basket and transfer to a cutting board (you can leave the paper in the air fryer). Once cool enough to cut (about 5-10 minutes of resting), slice the loaf into approximately 1” thick slices using a serrated knife

- Transfer the slices back to the air fryer, leaving air space between each one (do this in batches if necessary)

- Cook the slices for an additional 7-10 minutes at 320°F, or until crisp and desired level of browning is achieved. Flipping halfway through will help with more even browning, but do so carefully as the cookies are delicate
- Dip in chocolate, dust in powdered sugar, or enjoy as is!

What to Pair With Biscotti
- Wine (Red or Mulled Wine is best)
- Ice cream
- Pudding
- Freshly brewed Coffee in the Microwave
- Tea
- Milk
- Hot chocolate
- Whipped cream
- Fresh fruit
Recipe FAQs
Why Are My Biscotti Not Crunchy?
If your biscotti are not crunchy, it simply means they were not cooked long enough. Add a few additional minutes to the secondary cooking time and they should become sufficiently crunchy.
Much has to do with the thickness of your slices. If they are very large or dense, it will take a longer cooking time to achieve the crunchy texture.
How Long Will Homemade Biscotti Keep?
Homemade biscotti will keep 1-2 weeks if stored in a cool, dry environment in an airtight container.
For longer storage, you may freeze your biscotti for 2-3 months.
Recipe Pro Tips
- Don’t let the loaf of biscotti cool too long before slicing (about 5-10 minutes is sufficient) or else it will get too hard and make the job difficult
- If you don’t have parchment paper, you can spray the basket with nonstick spray instead, but I find the paper makes transferring easier
- I did two smaller loaves because I have a Ninja Dual Zone air fryer with two baskets. Most single basket air fryers you should be able to fit one larger loaf in
